Winemakers notes
Semillon grapes were picked at 49 Brix. Bunches were harvested after full botrytis infection in the vineyard. Bunch selection took place and only 100% botrytised bunches were picked for this wine. The juice was then transferred to barrel and fermentation took 74 days to complete.
Aroma
Honeyed tangelo is enriched with ripe mango and oriental spices. Hints of smoky oak and grassy tones.
Palate
Rich honeyed tropical fruits give a velvety soft mouthful of tangelo, mango and pineapple sweetness. Lasting flavours of ripe stonefruits with a limey support and luscious mouth feel complete the taste experience.
Food
Ideally accompanied by soft blue cheese, rich sweet desserts or just on its own.
Cellaring
This wine may be cellared for many years and is good drinking from 2003 onwards.
