Winemakers notes
A blend of Mendoza and Clone 6 Chardonnay grapes were handpicked and 50% whole-bunch pressed. The juice was then allowed to settle for 9 hours before being transferred to French oak barriques. A slow temperature controlled fermentation took approximately 30 days, after which 35 % underwent a malo-lactic conversion. The wine stayed in oak for a period of 10 months, during which time the lees were stirred back into the wine. Minimum fining and filtration ensured the true Chardonnay flavours have been preserved in this full-bodied complex wine.
Aroma
The aroma is of figs, melon and ripe tropical fruit, enhanced by tones of mealy characters and oak.
Palate
The palate is velvety smooth with complex flavours of melon, mango and sweet grapefruit. The complex flavours follow through to the finish supported by fine oak and a fine structure.
Food
This wine can be matched well with shellfish such as oysters and tasty white meat dishes.
Cellaring
Some cellaring will create a more rounded and harmonious wine. Ideal drinking from early 2002 till 2007.
