Winemakers notes
This Pinot Noir was hand harvested, destemmed and partially crushed leaving approximately 20% whole berries. The ferment was plunged 3 to 4 times daily and given some extended maceration on skins post fermentation. The wine was then drained to barrel and the skins basket pressed. We use 50% new, all French oak. Barrel maturation takes approximately 12 months and blending takes place prior to bottling. This wine is not fined and has had only a coarse filtration to retain the true character of Pinot Noir.
Aroma
An aroma of fresh raspberry and cherry with subtle earthy, gamey influences and fine oak.
Palate
An elegant soft palate of red fruits with earth and gamey hints and a firm finish.
Food
Great with meat salads and spicy dishes, cheeses or just on its own.
Cellaring
This wine will improve with some cellaring until mid 2004. It will cellar well for a further 4 years.
