Winemakers notes
Semillon grapes were harvested from our winery vineyard. The juice from a combination of skin contacted and whole bunch pressed fruit was fermented 85% in tanks and the remainder in French oak barriques. Temperature controled conditions preserved the delicate fruit flavours of the variety. Fermentation took approximately 30 days after which the wine was left on yeast lees for six months.
Aroma
Fresh limes with a sweet lifted bouquet of pineapple and pears. Floral tones and sweet yeasty notes.
Palate
Fresh limes and pear with delicate fruit sweetness show early on the palate. The wine has a firm structure and some sweet flavours derived from time on yeast lees. With time we expect to see some roundness and honeyed characters developing.
Food
Great with fish dishes and quiche.
Cellaring
This wine is good summer drinking from late 2003 and with time will develop more rounded and honeyed characters. Cellar potential 4-5 years.
