Overview:
Because weather conditions were so settled leading up to harvest, we were able to postpone picking until the fruit had reached optimum ripeness.

Can be enjoyed with pasta, or as an accompaniment to beef or lamb dishes. Try it with wiener schnitzels topped with grilled mushrooms. Well suited to summer drinking.

Production Notes:
The various parcels of fruit were harvested from early to mid April at 22 brix. Fermentation took place in stainless steel tanks and small concrete vats. Frequent pump-overs and hand plunging during ferment were performed to extract colour and soft tannins. The wine was pressed off the skins to French oak barriques and aged. The final blend was lightly egg white fined prior to bottling.
Tasting Notes:
A garnet-hued wine encapsulating soft earthy aromas of cherry, plum and spice, make this a very attractive aperitif for alfresco summer evenings. These aromas are picked up on the palate along with a hint of raspberries to give a soft and supple wine of medium length and intensity.
