WINEMAKING AND VINEYARD NOTES
Sourced almost entirely from the lower stony terrace of the vineyard and from the lowest vigour and cropping parcels. More than 40% of the total vineyard production was declassified. A combination of hand and machine harvested fruit, gently pressed and fermented cool as separate vineyard lots until selection and blending. The final wine is made up of 13 different parcels. Several parcels accounting for over 30% of the final blend, were fermented with indigenous yeasts in either French oak barriques or tank, and then left on lees to develop textural qualities in the finished wine. Some parcels were fermented using various levels of juice solids to increase the complexity of fruit character.
WINE NOTES
The wine is somewhat of a revelation; rich and evocative aromas of peach, apple, lime, hints of passionfruit and delicate nuts. Flavours are forward and full with stone fruit, lime and grapefruit flavours balanced with a bright sweet herbaceous edge. The palate is long and textural with the unique gentle grainy character typical of this vineyard and a lovely juicy feel. Earlier drinking than previous vintages. A classy, complex Sauvignon Blanc showing signs of real pedigree.
