Harvest
The grapes were hand sorted and hand harvested from our Gimblett Road Vineyard. The grapes were harvested twice. There was approximately 50% botrytis infection at harvesting.
Vinification
The grapes were gently destemed and crushed and soaked on skins overnight. The following morning the grapes were pressed and the juice was partially settled. The second pick was whole bunched pressed twice. The juice was inoculated with yeast and fermentation was conducted in tank. The fermentation temperature was kept cool to retain flavour and control the ferment. Fermentation was arrested at about 100g/l residual sugar. Prior to bottling the wine was fined, stabilized and filtered.
