Vinification
The grapes were whole bunch pressed. The juice was cut and the harder pressings were kept separate. The juice was inoculated with yeast and fermented in tank and seasoned barriques. The wine was left on lees for 7 months. There was no malolactic fermentation. After maturation the wine was blended, lightly fined and stabilized prior to bottling. Secondary fermentation occurred in the bottle.

27% Hawkes Bay Clone 2-23 Chardonnay
73% Marlborough Clone 6 Chardonnay
Disgorging
The bottles were disgorged after 20 months on lees.

Oaked in seasoned french oak barrels

Sensory
This Blanc de Blanc has a lively and fresh approach with a lovely bouquet of apples and citrus fruits combined with brioche and nutty overtones. Delicate and subtle flavours with some complex, creamy richness and fine persisten bubbles giving length.
