Technical Details
Winemaker's Notes The grapes were hand harvested and gently crushed into small open top fermenters. During fermentation hand plunging is used to ensure gentle extraction of colour and tannins from the fruit. After a period of post-fermentation maceration the free run wine is run to barrel for ageing. No press wine is used in the Five Hills blend. The wines are regularly racked prior to light egg white fining and bottling. The final blend is Merlot 62%, Malbec 21% and Cabernet Sauvignon 17%.
