Vinification
Chardonnay (50%) and Pinot Noir (50%) were hand harvested at just the right maturity to make neutral base wine. Whole bunch pressing is a gentle process, which produces juice light in phenolics and delicate in flavour. Moderate fermentation temperatures produce a delicate, neutral base wine.
Following fermentation in the bottle, this 1995 Methode Traditionelle had five years maturation on yeast lees. This maturation in contact with yeast produces rich, creamy yeast autolysis characters, which typify the Methode Traditionelle process. The process of riddling, degorging, liquering and labeling are all performed carefully by hand- to produce this stylish, elegant wine.

Cellaring
The Brut will mature in the bottle for up to ten years. The five year winemaking process does allow current drinking also.
